Simple method of making Indian dish Paneer Masala

- 250 grams paneer (Indian cheese), in cubes - 2 large onions, finely chopped - 2 large tomatoes, pureed - 1/2 cup curd - 1/2 cup cashew nuts, soak in water for 30 minutes - 2 tbsp. ginger-garlic paste

- 1 teaspoon cumin - 1 teaspoon turmeric powder - 1 teaspoon red chili powder (as per taste) - 1 teaspoon coriander powder - 1 teaspoon garam masala - 1/2 tsp cumin powder

- 1/2 cup cream - 2 tbsp oil or ghee - fresh coriander for garnishing - salt to taste

Making Instructions:

Heat oil or ghee in a pan on medium flame. - Add cumin and let it crackle. Add finely chopped onion to it and fry until it turns golden brown. Add ginger-garlic paste and fry for another minute until the raw smell disappears. Add chopped tomatoes and cook until oil separates from the spices.

Grind the soaked cashews in a blender and make a smooth paste. Mix this paste in tomato-onion mixture and cook for a few minutes. Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well and cook for 2-3 minutes. - Beat the curd well and mix it with the spices. Stir continuously to avoid clumping.

Add chopped cheese to the spices and mix gently to coat the cheese with spices. - Add cream and sprinkle garam masala. Cook on low flame for 5-7 minutes until the paneer is completely cooked. Garnish with fresh coriander leaves.
